A Biblical city once known as Rabbat Ammon, the archaeology of Amman dates back some 12,000 years. Characterised by its mountainous landscape, Amman is made up of a number of districts spread across 17 jabals (hills). In antiquity, it was claimed by a string of conquerors, who left behind archaeological landmarks like the Citadel and the Roman Theatre. The latter boasts a seating capacity of over 6000, and has been impressively restored to its former glory.
Amman has seen considerable growth since it became the capital of the new Emirate of Transjordan, which became the Hashemite Kingdom of Jordan in 1921. A secure and prosperous city, it attracts newcomers from across the Levant region, and has historically offered sanctuary to various displaced groups from neighbouring countries. As a result, the city has developed a distinctly multicultural culinary scene, fusing elements of cuisine from all corners of the Middle East. Despite Amman’s impressive age, it has the feel of a young and liberal capital with an exciting future ahead.
